Chestnut flour is typical of the Ligurian hills and has been a basic foodstuff on the Mediterranean coast of Italy for centuries. La Bella has combined this traditional flour with a ruffled flat short pasta that recalls the old time Liguria; the short, flat ruffles are meant to look like the ruffled collars of “signorine” of Liguria.
